The week before Christmas was a very memorable time for my family and I! We were blessed to have a chance to bring my kids to Disney World! When I was a kid, we went one time when I was around 7 or 8. (It’s expensive!) My husband on the other hand, went MANY times! I’m pretty sure they used to go once a year! So needless to say, he is the Disney expert! He does all the planning, booking, and everything in between. (Those years of being a travel agent paid off!)
One of his passions when going to Disney is choosing restaurants. And rightfully so because they have AMAZING places to eat! One of our favorite places to experience the food is in Epcot in Mexico. (Epcot has different countries inside the park! It gives you a chance to experience different cultures.) The restaurant that we always visit is called San Angel Inn. Yes, it’s Mexican food. Yes, you already know I LOVE it! Every single time we’ve gone there, we’ve enjoyed it tremendously!
The restaurant is indoors, but the ceiling inside looks as though it is outside at night under the stars! It’s pretty cool! When you sit down, they bring you a basket full of chips with salsa. (Is your mouth watering yet?!) Most places I’ve been to only bring you red salsa, but they bring out 2! A red and a green one! To say I LOVED the green salsa is an understatement!
When we got back home from our vacation, I thought about that salsa non stop! That’s all I wanted to eat! (And to answer your question, no, I’m not pregnant!) I wanted to try to find a recipe that was similar, but I knew that it wouldn’t be anywhere near the exact recipe from the restaurant! So being the awesome man that my husband is, he started to do some research. I never thought in a million years he would find out anything about the salsa. I labeled it in my mind as impossible!
When my husband was doing some research, he came across a fan page for Disney fanatics. (Only a Disney fanatic would know how to get to a fan page for Disney fanatics!) On the message board, it mentioned that a person can always email Disney with any questions and they typically will respond. Sometimes, it could just be a response like, they can’t share specific information with you, or they don’t know exactly what is in a recipe, etc…Sometimes their hands are tied on details.
My husband decided to give it a shot, and figured the worst thing that could happen, was for them not to respond to his email. We figured, if we DID get a response, it would be that they couldn’t share the recipe with us. Again, we thought it was impossible!
But oh my friend….let me tell you about the God we serve that makes things possible!! (even the things you think He doesn’t care about!) Two weeks after my husband emailed Disney inquiring about the salsa verde recipe, he got an email back! And it contained the recipe that I had been dreaming of!!! I was in SHOCK! It was a modified version because of the volume of people they serve, but it was the closest recipe that we would get to the exact one!
We went to the grocery store that day as soon as we got the email and made salsa verde! It was soo delicious and tasted like I remember!!! I was truly the happiest wife in the world!
What amazes me is that my husband cared about this salsa recipe enough to search it out! That might seem silly and time consuming to some, but he even cared about something so small and pointless.
That’s exactly how God is! He cares about the big and small things and everything in between. He has the power to make the impossible happen. You might not know how it will come to pass, or if it even will come at all, but trust that God is diligently working on your behalf. Think of it like this, God is behind the curtain moving all of the pieces and parts. And when the time is right, He will open the curtain and reveal His plans, purpose, and will for your life.
Matthew 19:26 (NIV)
“Jesus looked at them and said, ‘With man this is impossible, but with God all things are possible.’”
A set of scriptures I’ve been studying lately also comes from Matthew. It is chapter 14 verses 22-33…it talks about the story of how Peter walked on the water with Jesus! But, how many of the disciples with Peter on the boat, thought it was impossible for Peter to walk on that water? I’m thinking all of them thought that! There was also a point where Peter also doubted! Read the story down below this blog!
Are you praying about your marriage, your relationship, your job, your finances & your health and you are just waiting for God to move in that situation? Waiting for the curtain to open on your life…..does your situation seem impossible??!!
Be patient. Let God do His work. Trust His will. But, don’t stop praising Him for being a good God. Don’t stop loving. And don’t let the enemy keep you hidden under a bushel of pain and hurt. Rise up and proclaim that all things ARE possible with Christ! Even the smallest ones!
Need an encouraging song to remind you that NOTHING shall be impossible? Listen here!

Matthew 14:22-33 (NLT)
Jesus Walks on Water
22 Immediately after this, Jesus insisted that his disciples get back into the boat and cross to the other side of the lake, while he sent the people home. 23 After sending them home, he went up into the hills by himself to pray. Night fell while he was there alone.
24 Meanwhile, the disciples were in trouble far away from land, for a strong wind had risen, and they were fighting heavy waves. 25 About three o’clock in the morning Jesus came toward them, walking on the water. 26 When the disciples saw him walking on the water, they were terrified. In their fear, they cried out, “It’s a ghost!”
27 But Jesus spoke to them at once. “Don’t be afraid,” he said. “Take courage. I am here!”
28 Then Peter called to him, “Lord, if it’s really you, tell me to come to you, walking on the water.”
29 “Yes, come,” Jesus said.
So Peter went over the side of the boat and walked on the water toward Jesus.30 But when he saw the strong wind and the waves, he was terrified and began to sink. “Save me, Lord!” he shouted.
31 Jesus immediately reached out and grabbed him. “You have so little faith,”Jesus said. “Why did you doubt me?”
32 When they climbed back into the boat, the wind stopped. 33 Then the disciples worshiped him. “You really are the Son of God!” they exclaimed.
